    Fermentation Magic with Mara & Willow of Ozuke'

    Ozuke KrautCome join Mara and Willow King of the Esoteric Food Company and The Living Arts School for an afternoon of Fermentation Magic!

    We will go over the basics, answering questions as we go. We will make a seasonal kraut, and we will also demonstrate and go over the nuances of traditional Korean style hand massaged kimchi.  Bring 2 x quart sized ball jars so you can bring your kraut / kimchi babies home with you.

    Originally from Hong Kong, Mara King was born in to family with a generous and joyful approach to food.  Her Grandfather’s Noodle factory, founded in 1941 is still operating today.  She worked as a professional chef for 20 years in the challenging and detailed worlds of Sushi and Italian Fine Dining.  She brings an insatiable curiosity to the table and is committed to sharing her excitement for food with as many people as she can. Her latest venture, Ozuké, a cultured foods company, marries her love of science, experimentation, flavor and the power of the invisible.

    Willow King is a Boulder native but has spent many year circling the globe gathering stories, recipes and folk wisdom. She has worn many hats over the years: marketing, editorial work, corporate fundraising, NGO work in microfinance, and teaching.. yes, she is an Aquarius. At Ozuké she keeps track all of the moving parts but still likes to find time to mess around in the kitchen and make good things to eat.  You can find Mara and Willow most days at their fermented foods factory out in Lafayette, CO.

    No experience necessary.  Please bring 2 quart sized jars and all other materials and supplies will be provided.  Minimum of 4 participants, maximum of 15.  Pre-registration is required.

    Denver and Boulder Producers Tour

    We have partnered with some amazing Colorado producers who support local farmers by turning locally farmed items into delicious preserved bites that are perfect for your refrigerator or pantry.  Each tour will introduce us to two producers. We will see their digs, meet their visionary, and experience two hands-on hours in their world.  The Producers Tour will include delicious catered lunches crafted from local foods and a sampling of preserved food items for you to bring home.
    Ozuke and Rowdy Mermaid
    We will meet at Ozuke in Lafayette and travel to Boulder’s Rowdy Mermaid Kombucha.  After a morning in the kitchen at Ozuke learning to ferment vegetables, we will head to the the Rowdy Mermaid tap room for a locally-grown lunch and kombucha on tap. Once our bellies are full, we will head into the brewery and get to work learning the art of fermenting tea. *Please wear pants and closed-toed shoes. Hairnets will be provided for those not wearing hats.
